Knife Recommendation? - Kitchen Knife Forums

Thank you all for your thoughtful responses!I will try to be as thorough as I can in my reply as well.One thing that stands out from many of the comments is that the sort of vagueness in my initial question stems from the fact that I have never really used 'nice' knives. The set I have is a $99 butcher's block set that was gifted to me, and I have added a Zwilling Twin Fin santoku which is what I primarily use. So I actually don't really have a sense for what I am specifically looking for. My motivation for posting was 'I want to get a nice knife. If it is something of high quality that most posters on this forum agree is nicely made, I am sure that I would like it as well.This might not end up being true I suppose - but another constraint I am facing is that my wife views kitchen knives as a tool rather than a hobby themselves. Now, I have been cooking (as an amateur) for well over 15 years and it's one of my passions (which is why she is okay with me spending a good amount of money on my kitchen tools), but she essentially is opposed to me getting multiple types of what she views to essentially be the same thing. I figure I could get her to come around on adding a nakiri and a petty knife in the future, but that is why I would like to make sure I get something nice for what would be my main chef's knife. In terms of length I was thinking 210mm, as it would definitely be longer/an upgrade over my current 170mm santoku, and I wasn't too sure if I would feel a 240mm would feel too long for me.Sharpening was something I was going to have a follow up question on once I settled on something, but I suppose I can ask now as well. Fortunately, the avocados should be nice and ripe, so you don’t have to make neat slices, just scoop the avocado out of the flesh.WASH AVOCADOS: Like all fruit, wash the outside of the avocados with soap and water before cutting, so you don’t transfer bacteria from the skin through the flesh as you slice.
